I have been making this yummy and easy lentil soup recipe for years, and am excited to share it with you!

In Chinese Medical food cures, the lentils are considered a spleen energy tonic. Since I use plenty of ginger, garlic, turmeric, and other spices, it also helps strengthen the lung energy and boosts the immune system. With the addition of indian spices, this helps remove blood stagnation (pain) and inflammation in the body. This yummy and easy lentil soup recipe will make enough for 6 dinners, and it costs less than $15 CND.

To make this yummy and easy lentil soup recipe you will need:

-slow cooker

-1 pkg red lentils

-1 large onion

-6 stalks celery

-5 carrots peeled

-1 to 2 bulbs garlic (*tip: can freeze up to 6 months)

-1 fresh ginger root (*tip: can freeze up to 6 months)

-chicken boullion

-2 tbsp garam marsala

-1 tbsp curry

-1 tbsp turmeric

-S + P to taste

Follow these simple steps:

1)finely chop onions, celery, carrots, garlic and ginger and add large frying pan. Add spices and salt and pepper to taste. Cook until soft.

2)Add 1 tbsp chicken boullion to 4 cups water, stir, and add to slow cooker

3)wash and strain red lentils

4)Add vegetables to slow cooker

5)cook on high for 4 hours

6)Serve with cilantro and your favorite tea biscuit OR freeze in ziplocs until you are ready to enjoy!
